Lovely leftovers

If you’ve cooked too much, try to use the leftovers for another meal. To help, it might be worth keeping your fridge, freezer and cupboard stocked with basic food staples so you can rustle something up when you need to and use items up e.g. pasta, stock cubes, and bread.

Children don’t always like what they’re given so having a range of food items at hand to make different meals is important to satisfy their taste buds and keep them interested in what they are eating.

Chickpea Curry

Serve this nourishing and cheap dish with rice or naan bread. Mango chutney or yoghurt are great accompaniments.

Ingredients

  • 1 x 10ml spoon vegetable oil or butter
  • 1 clove garlic, peeled and crushed
  • 3cm fresh ginger, peeled and grated
  • 1 x 10ml spoon curry powder
  • 1 x 200g portion sauce (following the One Planet Sauce recipe)
  • 1 x 400g can chickpeas, drained
  • 25g creamed coconut
  • fresh coriander

Method

  1. Stir-fry the ginger and garlic in the oil or butter.
  2. Stir in the curry powder and add the sauce, chickpeas and coconut.
  3. Simmer for 5 minutes until the coconut melts. Garnish with fresh coriander.
